What you need

For about 25 cookies:

  • 330g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 5 teaspoons vanilla chai latte powder
  • 220g dark brown sugar
  • 115g unsalted butter, at room temperature
  • 1 large egg, at room temperature
  • 80ml molasses or candy syrup 

For the glaze:

  • 60g powdered sugar
  • 30g vanilla chai powder
  • 15ml (or more) milk
  • 15ml molasses or candy syrup

How you make it

Step 1: Whisk together flour, baking soda, salt, and vanilla chai powder in a medium bowl until well combined.

Step 2: In a large bowl, use an electric mixer on medium speed to beat brown sugar and butter until light and fluffy (about 3 minutes). Add the egg and beat until incorporated. Mix in 80ml molasses or candy syrup just until combined. Reduce mixer speed to low and gradually add the dry ingredients, beating until fully incorporated. Pat the dough together and wrap it in plastic. Chill until firm, approximately 1 hour.

Step 3: Preheat the oven to 180 degrees Celsius. Line a baking sheet with parchment paper. Scoop out level tablespoonfuls of dough, roll between the palms of your hands into smooth balls, and place them on the baking sheet, spacing about 5 cm apart.

Step 4: Bake cookies until just firm around the edges, for 9-12 minutes (less for chewier cookies, more for crispier ones). Let the cookies cool for about 5 minutes on the baking sheets, then transfer to wire racks and let them cool completely.

Step 5: Repeat the process with the remaining dough, using fresh parchment paper on the baking sheets.

Step 6: In a medium bowl, whisk together powdered sugar, vanilla chai powder, milk, and 15ml molasses or candy syrup until smooth. The glaze should be very thick and glossy but still pourable. If needed, add more milk or water, 15ml at a time, until you reach the desired consistency. Drizzle the glaze over each cookie and sprinkle with a little vanilla chai powder.
