Recipe // Vegan S'mores Cookie Bars

HERE'S WHAT YOU NEED.
MAKES 8 - 10 SERVINGS.

20 x 30 cm baking tray
-
parchment paper
-
140g brown sugar
-
60g caster sugar
-
1 teaspoon cinnamon powder
-
100g vegetable oil
-
120g plantbased milk
-
200g flour
-
10g cornflour
-
1 teaspoon baking powder
-
1 bag of Mallow Puffs Vanilla Bean Mallows

LET'S GET STARTED!

Preheat the oven to 180°C.

Line a 20 x 30 cm baking tray with parchment paper.

In a large bowl, mix the brown sugar, caster sugar, and cinnamon. Add the vegetable oil and whisk together until smooth.

Add the flour, cornflour and baking powder. Mix all.

Add the plantbased milk and mix all.

Chop the marshmallows into 2 pieces. Use 1/3 of the marshmallows and add them into the mix. Pour the batter into the baking tray.

Use the rest of the marshmallows and place them on top of the batter.

Bake for 25 minutes. Afterwards, remove from the oven set aside to cool down for about 10 - 15 minutes.

Once cooled, slice into 8 - 10 bars.
